1/2 yellow onion
5 medium potatoes
3 tsp butter
1 apple
4 cups water
200ml heavy cream
1 tsp vegetable stock powder
Juice of a lemon
Pepper and salt to taste
1 :: Slice and casually chop the onion, then place the butter in a large saucepan and melt it on a medium heat. Pour the onion in and start stirring until it turns slightly golden.
2 :: Meanwhile wash the potatoes and wipe them with a clean cloth and cut them in quarters leaving the skin on.
3 :: Peel the apple and chop it up in little cubes.
4 :: When the onion looks golden, add all the potatoes and the apple and stir. Leave them there for 10/15 minutes stirring along the way.
5 :: Add the vegetable stock and start adding a third of the water. Then add another third after 15 minutes. Then again. Meanwhile stir sometimes and allow it all to cook on a medium heat. It should be ready after 45 minutes when the potatoes will be soft and done.
6 :: Add salt and pepper to taste, then add the heavy cream all at once and stir well.
7 :: Remove the saucepan from heat and using a blender blend everything until smooth.
And you're done! Serve it with some lemon juice, chopped parsley and freshly baked croutons and you'll have the most delicious, soft, warming, delicate soup to taste when it's cold outside for your autumn dinners.
